Every character here is Unicode. Unicode is the shared standard that gives each written character in the world its own number, so that a symbol typed on a phone in Lahore arrives intact on a laptop in Berlin. That is why these behave like ordinary letters rather than pictures.
In practice this means a pasted symbol takes on the font, size and colour of the text around it, stays searchable with Ctrl + F, survives being saved as a PDF, and works in Word, Excel, Google Docs, Slack, email subject lines, social captions and product listings. An image of a symbol does none of those things.
The twelve categories in the filter are there because people rarely want a symbol in the abstract. They want a currency sign for an invoice, an arrow for a diagram, a tick for a checklist, a Greek letter for an equation, or a fraction for a recipe. Choosing a category narrows 272 symbols to the handful that fit the job.

This confuses people more than anything else, so it is worth being clear: a box or a question mark does not mean the copy failed. The character is on your clipboard and it pasted correctly. What went wrong is on the other end, where the font in use has no drawing for that character.
The fix is to change the font rather than the symbol. Fonts with wide symbol coverage include Arial Unicode MS, Segoe UI Symbol, Noto Sans and DejaVu Sans. Select the symbol on its own, switch it to one of those, and it will appear. In a website, listing the same fonts in your CSS font stack solves it permanently.
Copying wins when you need a symbol once. Typing wins when you need the same one all day. If you are in the second group, the Alt code finder lists the Windows Alt code, the Mac shortcut, the Unicode point and the HTML entity for every symbol that has one, so you can commit the two or three you actually use to memory.
